wherever you are, and eggs
Jun. 18th, 2023 01:35 pmDenise, wherever you are: I just made Eggs Fred. Surely by now Fred is dead. I say his name here now, however, for something he never knew (nor cared) that I knew about him, got from him through you, and today he is not dead in this house.
They didn't cloud over as much as I'd aimed for, but I think I used a little too little milk, after last time I made them (years back) using too much. Also I cooked them on way-low, and that no doubt steams the milk less. There let's blame Alton Brown, and that half-an-hour-on-one-thing show Elana turned me on to, of whose episodes the one that's stuck with me is the one on eggs, and of its concepts the one that's stayed most loudly: cook eggs slowly.
I had them with a couple of pieces of toasted Seeduction bread, a concession to whole grains, so they weren't sitting on white toast that I then cut up, like so much creamed chipped beef. But they were delish! And so was the Seeduction. Do you go to Whole Paycheck, Denise? That could go either way, I'm thinking.
